Recreate Momofuku Pork Buns at Home

We’re leaving Momofuku with a full (pork) belly & ambitions to make our own pork buns @ home! cucumber+hoisin sauce+fatty pig=heaven

Did a little googling to see how to make these famous Momofuku Pork Buns at home (no way I would be the first to try this at home- those little buns are 2 for $9!) The whole recipe, including helpful comments here.

Bread: Go down to Chinatown and buy the frozen ones. Or use a dense, sweetened white bread like Amish bread or dinner roll.  Eh, and if you’re going to make them from scratch make sure you use this improved recipe.

Cucumbers: easily 1-hour pickle them with salt and sugar using Momofuku’s actual recipe.

Pork: Use the good pork belly from Whole Foods or similar – here’s the simple recipe that includes 12-hour brine.
