Stranded Men Survived On Driftwood & Coconuts

After 2 months, 5 guys from Papua New Guinea were rescued from their boat that had run out of fuel.  While on the boat, they subsisted off of driftwood and coconuts floating in the water.  They would dry the driftwood and eat it, drink the coconut of their juice and then eat the dried rinds, and eat the rare crab when they were available. I wonder why they would eat the driftwood and coconut rind dried and not moist? And do crabs sometimes come up for air?
